This is a great carrot cake recipe that is easy to make.
I really enjoyed making this and I thought it tasted amazing. I made it for Sunday lunch when some guests came over and they even took some home with them because they thought it was so lovely!!
SIMPLE CARROT CAKE RECIPE
³/₄ cup brown sugar
¹/₂ cup sunflower oil (any vegetable oil will do)
2 large eggs, lightly beaten
3 medium grated carrots
¹/₂ cup raisins
1 ¹/₂ cup self-raising flour
1 tsp. bicarbonate of soda
1 tsp. ground cinnamon
Preheat the oven to 180⁰C. Grease the sides of a baking tin with margarine and dust with flour (i used a sufuria-pot). Tip the sugar into a large mixing bowl, pour in the oil and add the eggs. Lightly mix with a wooden spoon. Stir in the grated carrots and raisins
Mix the flour, bicarbonate of soda and cinnamon in a separate bowl, then sift into the bowl with the egg/oil/sugar mixture. Lightly mix all the ingredients – when everything is evenly mixed, stop mixing. The mixture will be fairly soft and almost runny.
Pour the mixture into the prepared tin and bake for 40-45 minutes. check for if it is done using a clean knife. Cool in the tin for 5 minutes, then turn it out and cool on a wire rack.
